something to show on the listing the amount of stock there is for that item...and
also when a buyer buys the showing qty goes down!!??

Have you tried zencart its free but i think you will need to find somewhere to host it.It will do all stock calculation for you.

If you know php and are ok with SQL you could knock up a simple script without too much problem, but to be honest the best bet is a shopping cart software:
I use CS-Cart personally and finally it is completely stable, the one feature I like it about it over most other carts I have used is the simplicity in setting up stock control for the same item but different colours (or other variations). For instance if I had "widget 1" for sale in Red, Blue, Green and White, in some carts I would have to make up 4 separate products which is more work and IMO not great for the customer to see so many repeated items etc. In CS-Cart you can create one product have a drop down menu (or check box) for colour choice and also with a little effort have separate images show for each product as colour choices are made and each colour can have it's own individual stock control.
The one limiting factor is it's a paid cart and you will require hosting with php & mysql you can find out more at http://cs-cart.com/
Google checkout users should note that if GC is the ONLY processor it runs flawlessly, however if you wish to offer nochex / paypal / cheques / postal orders then due to GC's requirements that their checkout system must be available before any customer details are taken on site many customers will miss the GC option, so I have switched purely to GC and I must say my lost carts have fallen by 60% since I chose that!

Steve do you use "buy now" buttons from PP ? if not how do customers pay for their purchases?
i use the paypal buttons...directly made from the sites buider add ons.
they then purchase..pay straight away!
